In short. Cold water in a dish, sliced cucumber, tomato and sweet Acquaviva onion, salt and olive oil — and bread dunked into it. The hot-weather meal of the Apulian countryside.
It sounds like nothing written down, and it is one of the best things you can eat in August. The onion of Acquaviva delle Fonti is sweet enough to be eaten raw in quantity, which is what makes this work.
