In short. Mussels opened over a low heat, taken out of the shell, floured, dipped in egg and fried in olive oil. Served hot, and eaten standing up.
One of those recipes that has four steps and no room for interpretation.
Ingredients
- 1 kg of mussels
- 100 g of flour
- 2 eggs
- extra virgin olive oil for frying, salt
Method
1. Opening. Clean the mussels well, put them in a covered pot and let them open over a low heat. Take them out of the shells.
2. Coating. Put the flour on one plate and the beaten egg on another. Roll the mussels in the flour, then through the egg.
3. Frying. Fry in plenty of hot olive oil. Serve hot.
