In short. Whole grapes, cut from the bunch with a bit of stem left on each one, packed into jars and covered with alcohol and sugar. Big, firm, properly ripe grapes only.

A Christmas preserve — they are opened months later, and the grapes come out of the jar whole.

Ingredients

  • green or purple grapes, good quality, ripened to the right point, firm and large
  • 1 litre of alcohol
  • 150 g of sugar

Method

1. Cutting. Cut the grapes off the bunch with scissors, leaving a bit of stem on each one. Pulling them off tears the skin, and a torn grape will not keep.

2. Cleaning. Clean each grape, one at a time, with a damp cloth — not needed if they are organic.

3. Filling. Place them delicately into jars, shaking gently as you fill so the grapes settle.

4. Covering. Cover with the alcohol and sugar, and close.
