In short. Discs of short crust pastry filled with jam, minced walnuts, citrus zest and cinnamon, folded over and baked. Christmas and festival baking, made in large quantities.

Cherry or grape jam is what tradition calls for, and the walnuts are what stop them being merely sweet.

Ingredients

  • 1 kg of short crust pastry
  • 500 g of cherry jam, or grape jam
  • 100 g of walnut kernels, minced
  • zest of orange or lemon
  • cinnamon
  • 1 tablespoon of sugar

Method

1. The filling. In a bowl mix the jam with the minced walnuts, the citrus zest, the cinnamon and the sugar.

2. The pastry. Divide the prepared short crust into balls. Roll each one out on a floured surface and cut discs of 8 cm.

3. Filling and closing. Put a tablespoon of the mixture in the centre of each disc, fold over and seal the edge.

4. Baking. Bake until golden.
