In short. Gileppo in dialect: a sugar syrup boiled to the right point, lightened with whisked egg white and sharpened with lemon. It is what covers scarcelle, tarallucci and the eyes of Saint Lucy.
There is no thermometer in this recipe. There is a wooden spoon and a plate, and they work just as well.
Ingredients
- 500 g of sugar
- water
- 2 egg whites
- lemon
Method
1. The syrup. Put the sugar in a pot and cover it with water. Cook over a low heat, stirring continuously.
2. The test. When it boils, take a little of the liquid on a wooden spoon and drop it onto a plate: if it does not run, the icing is ready.
3. The egg whites. Whisk them stiff separately and add them to the syrup a little at a time, stirring as you go.
4. The lemon. Finish with lemon.
Used on scarcella and on the eyes of Saint Lucy.
