In short. Maccheroni di San Giovanni — penne with anchovies, black olives, capers and tomato, simmered for ten minutes. A store-cupboard dish tied to the feast of St John.
Everything in it keeps: salted anchovies, olives, capers, tomatoes. It is the dish you can make on a day when nothing was bought.
Ingredients
- 350 g of penne
- 400 g of plum tomatoes
- 4 anchovies, desalted and boned
- black olives and capers
- garlic, extra virgin olive oil
- salt, pepper or chilli
Method
1. The sauce. Soften the chopped garlic in olive oil. Add the sliced anchovies, the strained tomatoes, the olives, the capers, salt and pepper, and let it simmer for about ten minutes.
2. The pasta. Cook the penne in plenty of salted water, drain, add the sauce and serve.
Taste before salting. Anchovies, olives and capers are all preserved in salt. The sauce usually needs none at all.
